wild mushroom gnocchi
2 Tablespoons olive oil
2 Tablespoons butter
1 pound baby Bella mushrooms (sliced thin)
1 pound shiitake mushrooms (sliced thin)
1 small onion (finely diced )
1 pint heavy cream
4 cloves minced garlic
Salt pepper to taste
Pinch red pepper flakes
1/2 cup freshly grated Parmesian cheese
1. Heat butter and oil
2. Add mushroom and onions and cook until softened (8 minutes)
3. Remove 1/2 cup mushrooms , reserve for garnish
4. Add heavy cream and garlic bring to a boil , turn down heat add the seasonings
5. Simmer until sauce thickens
6. Remove from heat and add Parmesan cheese
7. Add gnocchi , Toss until fully coated , serve immediately with reserved mushrooms and more freshly grated Parmesan.
