Barbie Gnocchi
2 packages of gnocchi
1/2 cup shallots sliced and sautéed until golden
1/3 c walnuts toasted until golden and fragrant
1 large head garlic roasted until golden
3 small beets roasted until pierced easily with fork
3/4 c ricotta cheese
4 ounces Parmesan grated
1 lemon zested and 2T juice
2T parsley including stem and leaf
2 ounce goat cheese
1/2 t garlic powder
1/2 t pepper
1/2 t salt
3/4 c Pasta water
Prepare gnocchi according to package directions. Blend all ingredients in blender. Adjust salt and pepper to taste. Top with walnuts, grated parmesan and parsley. Enjoy!
