Birthday in our house means you get to pick a birthday supper and a birthday cake of your choice.
My daughter, whose birthday is coming up, doesn’t like sweet, gooey cakes, then we saw kosher.com’s gnocchi contest…..hence the gnocchi birthday cake!!
Following is the recipe, enjoy, we did!
Cook 1 cup rice in 2 cups salted water, when cooked add a pinch of sugar and 1T rice vinegar.
Shape into round form.
Cook 7 chicken drumsticks, or any chicken of your choice, in salted water for 3 hours.
(save stock for a yummy chicken soup, you can cook with any veggies you like)
Remove chicken from bone and shred with 2 forks.
Boil 1 package tuscanini gnocchi in salted water for 5 minutes,then saute in 1 T oil with 1 cube frozen garlic for 2-3 min and remove from pan.
Cut 1 onion in wedges, add 1 cube frozen garlic, and saute in same frying pan, add shredded chicken, 1/2 tsp. each of red pepper flakes,paprika, parsley flakes and a shake of salt. Dissolve
1 T corn starch or flour in 3/4 cup water, pour over chicken and bring to a boil then close flame.
Decorate around rice with gnocchi and chicken on top.
Can serve with ranch dressing and extra fresh vegetables.
