Recipe is my own: “Gnocchi Alla Rustica: Pan-Fried Gnocchi with Pesto, Peanuts, Mozzarella, and Fresh Greens”
Ingredients:
Store bought Tuscanini gnocchi
1 tbsp olive oil
Pesto:
1 bundle fresh basil leaves
3 garlic cloves
1/2 cup walnut oil
1 tsp salt
Pinch of sugar
Peanuts, chopped
Shredded fresh mozzarella cheese
Basil leaves
1 green snap bean
Instructions:
1. Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Drain the gnocchi and set aside.
2. In a food processor, combine the basil leaves, garlic, walnut oil, salt, and sugar. Blend until a smooth pesto forms.
3. Heat 1 tbsp of oil in a large non-stick skillet over medium-high heat. Add the cooked gnocchi in a single layer and pan-sear for 2-3 minutes per side, until golden brown.
4. To serve, spoon a pool of the vibrant pesto sauce onto the center of a plate. Top with the pan-seared gnocchi, followed by the chopped roasted peanuts, shredded mozzarella, fresh basil leaves, and the a piece of green snap.
5. Enjoy!
