Simple and summery gnocchi caprese salad
Gnocchi
Cherry tomatoes
Mozzarella (whole if you can find)
Basil (fresh if you can find)
Basil pesto (homemade or store-bought)
Balsamic vinegar
Salt and pepper
1. Mix tomatoes with salt, pepper and balsamic vinegar. Leave for 15 minutes, mixing every so often, then drain excess liquid.
2. Saute gnocchi with olive oil and salt until golden brown and slightly crispy. Once cooled, toss with pesto.

4. Combine gnocchi and tomatoes. Top with mozzarella and basil. Optionally drizzle with balsamic glaze.
