My recipe for
One pan crispy gnocchi in creamy mushroom sauce:
One package tuscanini gnocchi
One shallot, diced
One package cremini mushrooms, cut into quarters
5 fresh sage leaves
4 tablespoons butter
2 cups heavy cream
1/4 cup grated Parmesan
Salt, to taste
Nutmeg, for garnish
Parmesan cheese, for garnish
Melt 2 tablespoons of butter in a large saucepan on medium heat. Add the gnocchi, and let sit for about 3-5 minutes until the bottoms of the gnocchi are crispy and golden. Transfer to a plate. In the same pan, add leftover butter, allow to caramelize for a few minutes. Add shallots and mushrooms and allow to brown. Add sage leaves and let crisp, about 1-2 minutes. Add cream and Parmesan. Raise heat to high, allow cream to bubble, then lower to simmer for about 5 minutes. Add gnocchi back in, sprinkle with Parmesan and nutmeg, and enjoy!
