Ingredients:
1 package Tuscanini gnocchi, cooked according to package directions
Sauce:
1 medium size beet, cooked or from a can
3/4 cup ricotta cheese
2 tbs lemon juice
2 tbs olive oil
1/4 cup reserved water from cooking gnocchi
1 tsp salt
Chopped walnuts, for garnish
Chopped parsley, for garnish
Crumbled feta cheese, for garnish
Directions:
Add sauce ingredients to blender and blend together until smooth. Pour over gnocchi and mix. Add garnishes, and serve!
