This is my own recipe.
I had some shredded beef taco meat in the freezer which I defrosted.
I used a bunch of vegetables from the fridge, diced and roasted them with salt, black pepper and garlic powder.
I prepared the shelf stable gnocchi as per the package directions.
When I was ready to serve dinner, I combined it all as follows.
In a large pan, I melted some margarine with a bit of olive oil and add in the gnocchi and fried till lightly golden brown.
While it was browning, I mixed taco seasoning, from cubes of cilantro and parsley, corn starch and hot water in a bowl and set it aside.
Once the gnocchi was browned, I added in the defrosted shredded beef and the vegetables and sautéed for a few minutes to heat thru.
Once heated, I added in the hot water mixture and let it cook till the sauce thickened up.
Serve hot and enjoy.
